Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 8 oz pasta (fettuccine or your choice)
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/4 teaspoon nutmeg
  • Fresh parsley, chopped for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper on both sides. Heat one tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken to the skillet. Cook for 5-7 minutes per side or until the chicken reaches 165°F (75°C). Remove the chicken and let it rest on a plate.
  • In the same skillet, add the uncooked pasta, sprinkle more salt over it, and pour in enough water to cover the pasta. Bring it to a boil, then reduce heat and simmer until the pasta is al dente.
  • Once the pasta is cooked, add the minced garlic and remaining olive oil to the skillet. Sauté for about 1 minute until fragrant. Pour in the heavy cream and stir well.
  • Gradually whisk in the grated parmesan cheese and sprinkle in nutmeg. The sauce will thicken beautifully.
  • Cut the chicken into slices and place it back into the skillet. Toss everything gently to combine for a couple of minutes over low heat.
  • Garnish with fresh parsley and serve.

Notes

Use thinly sliced chicken breasts for quicker cooking and crispier results. Salt your pasta water to season it. Rest the chicken to lock in juices.
