Instructions
 

  • Rinse the squash and slice it into 1/4-inch thick rounds.
  • In a bowl, combine flour, cornmeal, salt, pepper, and garlic powder.
  • If desired, beat an egg in a separate bowl.
  • Heat oil in a frying pan to about 350°F.
  • Dip each slice of squash into the egg (if using), then coat it in the flour mixture.
  • Carefully place the coated squash slices into the hot oil and fry for 2-3 minutes on each side until golden brown.
  • Remove and drain on paper towels, sprinking with additional salt if desired.
