Ingredients
  

  • 1 cup rolled oats
  • 2 cups Greek yogurt
  • 2 cups fresh strawberries, sliced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup granola
  • 1 tablespoon chia seeds (optional)

Instructions
 

  • Prepare the oats by combining the rolled oats with half a cup of water or milk. Allow them to sit in the refrigerator overnight or for at least 30 minutes.
  • Wash and slice the strawberries.
  • In another bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
  • Layer the parfait by starting with a layer of oats at the bottom, followed by a layer of the yogurt mixture, and then a layer of sliced strawberries. Repeat the process until you reach your desired height.
  • Top the parfait with granola and chia seeds if desired.
  • Enjoy immediately or cover and refrigerate for up to 2 days.
