Ingredients
  

Creamy Garlic Sauce

  • 8 garlic cloves roasted
  • 1 tbsp olive oil for roasting garlic
  • 2 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream or half-and-half for lighter
  • 1 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tsp chili garlic sauce optional, for heat
  • salt & pepper to taste

Chicken

  • 2 chicken breasts or thighs boneless
  • salt, pepper, smoked paprika for seasoning
  • 1 tbsp olive oil for searing

Ramen and Toppings

  • 2 packs ramen noodles discard seasoning packets
  • 2 eggs soft-boiled
  • 1 cup baby spinach or bok choy
  • 0.25 cup scallions thinly sliced
  • sesame seeds for garnish
  • chili oil or sesame oil optional drizzle

Instructions
 

  • Preheat oven to 375°F (190°C). Wrap garlic cloves in foil with olive oil and roast for 25–30 minutes until soft and caramelized.
  • Season chicken with salt, pepper, and smoked paprika. Sear in a skillet with olive oil over medium-high heat, about 4–5 minutes per side until cooked. Rest, then slice.
  • In the same skillet, melt butter and stir in flour to form a roux. Slowly add broth while whisking. Stir in cream, mashed roasted garlic, miso paste, soy sauce, and chili garlic sauce. Simmer 10 minutes until thickened.
  • Bring water to a boil. Cook ramen noodles per package directions (3–4 minutes). Drain and set aside.
  • Gently add eggs to boiling water. Boil for 6–7 minutes. Transfer to an ice bath, peel, and halve.
  • Divide noodles among bowls. Pour sauce on top. Add sliced chicken, soft-boiled eggs, spinach, scallions, and sesame seeds. Drizzle with chili oil or sesame oil if desired.

Notes

For a richer broth, use bone broth instead of regular chicken broth.
Customize with mushrooms, corn, or bamboo shoots.
Sauce and chicken can be made ahead and refrigerated for 1–2 days.
Store noodles separately to prevent sogginess.
