Ingredients
  

  • 12 oz pasta (fettuccine or penne)
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 lb chicken breast or shrimp
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions
 

  • In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about a cup of pasta water.
  • In the same pot, heat olive oil over medium heat. Add chicken or shrimp, season with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook until golden brown or pink and cooked through, about 5-7 minutes. Remove from the pot and set aside.
  • In the same pot, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in heavy cream, stirring constantly, and add remaining Cajun seasoning. Let it simmer for 2-3 minutes.
  • Gradually stir in grated Parmesan cheese until melted and smooth. Add reserved pasta water as needed for desired consistency.
  • Add cooked pasta and sautéed chicken or shrimp back into the pot, tossing until well coated.
  • Garnish with fresh parsley and serve immediately.

Notes

Use freshly grated Parmesan for best flavor. Adjust Cajun seasoning to your spice preference.
