Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 cup brown rice or jasmine rice
  • 1/4 cup lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 2 cups seasonal vegetables, chopped
  • Fresh parsley or cilantro for garnish

Instructions
 

  • Marinate the chicken by combining lemon juice, minced garlic, olive oil, honey, salt, and pepper in a bowl. Coat the chicken and let it sit for at least 15 minutes.
  • Prepare rice according to package instructions.
  • Heat a non-stick skillet over medium-high heat, add the marinated chicken, and cook for about 5-7 minutes on each side until cooked through (internal temperature reaches 165°F). Let it rest for 5 minutes before slicing.
  • In the same skillet, stir-fry the chopped vegetables for 3-5 minutes until tender but still vibrant.
  • Assemble the bowl by placing rice at the bottom, topping it with stir-fried veggies and slices of chicken. Drizzle with remaining marinade and garnish with parsley or cilantro.
  • Enjoy hot or as leftovers.

Notes

Prep ahead by marinating the chicken the night before. Cook extra rice for future meals. Use a meat thermometer for perfectly cooked chicken. Customize toppings and flavors as desired.
