Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Royal icing for decorating
  • Food coloring (red, green, black) as needed

Instructions
 

  • Beat softened butter and sugar together until light and fluffy.
  • Add in eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  • Whisk together flour, baking powder, and salt in another bowl, gradually add to wet ingredients until just combined.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
  • Preheat oven to 350°F (175°C). Roll out the chilled dough to about ¼ inch thick and cut out cookie shapes.
  • Bake in the preheated oven for about 8-10 minutes or until edges are just golden.
  • Prepare royal icing while cookies cool by mixing confectioners' sugar, meringue powder, and water.
  • Color the icing with food coloring to achieve watermelon colors.
  • Decorate using piping bags with different tips, outline and flood the cookies with icing.
  • Allow cookies to dry thoroughly before serving or packaging.

Notes

The dough can be made ahead of time and stored in the refrigerator for up to two days.
