Ingredients
  

  • 1 (9-inch) unbaked pie crust
  • 4 cups sliced tomatoes
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil leaves
  • 1/2 medium onion, thinly sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Place your unbaked pie crust in a 9-inch pie pan and crimp the edges.
  • Layer sliced tomatoes in the crust, sprinkling with salt and black pepper.
  • Sprinkle the thinly sliced onion on top of the tomatoes.
  • In a bowl, combine shredded mozzarella, grated Parmesan, and mayonnaise until smooth.
  • Chop fresh basil and fold it into the cheese mixture.
  • Spread the cheese mixture over the layered tomatoes evenly.
  • Bake for 30-35 minutes or until the top is golden and bubbly.
  • Let cool for about 10 minutes before slicing and serving.

Notes

Choose ripe, in-season tomatoes for best flavor. Let the pie rest after baking to help it set. Add a pinch of red pepper flakes for heat if desired.
