Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • ¾ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until mixed well. Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  • In a separate bowl, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until smooth.
  • In another mixing bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the lemon filling until just combined.
  • Pour the filling into the prepared crust, spreading it out evenly.
  • Cover the pie and refrigerate for at least 4 hours, or overnight.
  • Once set, slice and serve chilled, garnished as desired.

Notes

For a gluten-free version, use gluten-free graham crackers. Consider adding fresh herbs for extra flavor. Store leftovers covered in the refrigerator for up to 5 days.
