Main Ingredients
- 2 lbs chicken breasts boneless, skinless (or thighs)
- 1 can pineapple chunks 20 oz, with juice
- 0.5 cup soy sauce low-sodium preferred
- 0.5 cup brown sugar or honey
- 2 cloves garlic minced (or 1 tsp garlic powder)
- 1 tsp ginger grated (or ½ tsp ground ginger)
For Thickening (Optional)
- 2 tbsp cornstarch optional
- 2 tbsp water for cornstarch slurry
Trim and pat dry the chicken. Place it at the bottom of the crockpot.
In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger until combined.
Pour the sauce over the chicken. Add pineapple chunks on top.
Cover and cook on Low for 5–6 hours or High for 3–4 hours, until chicken is tender and reaches 165°F internally.
(Optional) For thicker sauce: 20 minutes before serving, mix cornstarch with water, stir into crockpot, and let cook until sauce thickens.
Shred chicken with two forks or serve whole. Spoon sauce over the top before serving.
Chicken thighs can be used for a juicier alternative.
For a spicy version, add red pepper flakes or sriracha to the sauce.
