  • 1.5 pounds chicken breasts, diced
  • 1 cup long-grain rice
  • ½ cup sweet chili sauce
  • 2 cups chicken broth or water
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons olive oil
  • 3 green onions, sliced (for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions
 

  • Heat the olive oil in a large pan over medium heat. Add minced garlic and ginger, stirring for about 1 minute until fragrant.
  • Add diced chicken to the pan. Season with salt and pepper, cooking for 5-7 minutes until golden brown and cooked through.
  • Rinse the rice under cold water. Add the rinsed rice and chicken broth to the pan, stirring to combine.
  • Bring the mixture to a gentle boil, reduce heat to low, and cover the pan. Simmer for about 15 minutes until rice absorbs liquid and is tender.
  • Remove from heat, keeping the lid on, and let sit for 5 minutes.
  • Drizzle sweet chili sauce over the chicken and rice, fluffing gently with a fork to mix.
  • Garnish with sliced green onions and cilantro if desired. Serve warm.

Notes

Prep your ingredients ahead of time. Use leftover chicken to save time! Add red pepper flakes or sriracha for extra heat. Adjust liquid if using brown rice, which takes longer to cook.
