Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup fresh strawberries, diced
  • Powdered sugar (for dusting, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and cream cheese until light and fluffy.
  • Add the granulated sugar, brown sugar, and vanilla extract to the butter mixture and beat until combined.
  • Add the egg and mix until fully incorporated.
  • Gradually add the flour mixture to the wet mixture; mix until just combined.
  • Gently fold in the diced strawberries with a spatula.
  • Using a cookie scoop, drop spoonfuls of dough onto the lined baking sheet.
  • Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Use fresh strawberries for the best flavor. Store cookies in an airtight container. Can freeze for up to three months.
