Ingredients
  

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (softened)
  • 1/4 cup sour cream
  • 1 cup fresh strawberries (sliced)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing until just combined, and incorporate the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  • Press about two-thirds of the dough into the bottom of the prepared baking dish.
  • In a separate bowl, beat the softened cream cheese until smooth. Add the sour cream and mix until well combined.
  • Spread the cheesecake mixture over the cookie base evenly.
  • Scatter the sliced strawberries evenly over the cheesecake layer.
  • Crumble the remaining cookie dough over the strawberries.
  • Bake in the preheated oven for 30-35 minutes or until the top is golden and the edges start to pull away from the pan.
  • Let the bars cool in the pan for at least 30 minutes before slicing into squares and serving.

Notes

Use room temperature ingredients for a smooth batter. Don't skip the chilling time after baking. For thicker bars, use a smaller baking dish. Prepare cookie dough ahead of time for convenience.
