- 12 ounces pasta (fettuccine or your choice)
- 1 pound sirloin steak, cut into strips
- 4 ounces gorgonzola cheese, crumbled
- 1 cup parmesan cheese, grated
- 1 cup heavy cream
- 3 tablespoons butter
- 3 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
In a large skillet, melt 1 tablespoon of butter over medium-high heat and add the steak strips, seasoning with salt and pepper. Sear for about 3-4 minutes.
Remove the steak and set aside. In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute.
Add heavy cream to the skillet and simmer for 2-3 minutes.
Stir in grated parmesan and crumbled gorgonzola cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
Toss the cooked pasta and steak into the sauce, mixing well. Season as needed and serve garnished with fresh parsley.
Always reserve pasta water before draining!
Don’t rush the searing of your steak.
Use a non-stick skillet for easy cleanup.
For a vegetarian option, skip the steak and add roasted vegetables.
