Ingredients

  • 4 cups cucumbers (sliced or whole)
  • 1 cup white vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 2 tablespoons dill (fresh or dried)
  • 2 garlic cloves (smashed)
  • 1 teaspoon black peppercorns
  • 1 teaspoon red chili flakes (optional)

Instructions

  • Wash the cucumbers and slice them into your desired shape.
  • In a saucepan, combine the vinegar, water, sugar, salt, dill, smashed garlic, black peppercorns, and chili flakes. Bring to a boil over medium heat, stirring until dissolved. Remove from heat and let cool.
  • Pack clean jars with the sliced cucumbers and tuck garlic and dill into the jars.
  • Pour the cooled brine over the packed vegetables, ensuring they are submerged. Leave about half an inch of headspace.
  • Seal the jars tightly and gently shake to mix. Refrigerate. Wait at least 24 hours for the flavors to develop.
  • Enjoy your pickles as a snack or with meals.

Notes

Ensure all jars are clean and sterilized for freshness. Leftover brine can be used in dressings or marinades.
