Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any plant-based milk)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • Optional toppings (nuts, granola, coconut) as desired

Instructions
 

  • Prepare your ingredients by gathering all of them on the counter.
  • In a mixing bowl, combine the chia seeds with the almond milk. Stir well to avoid clumping.
  • After letting the chia seed mixture sit for a few minutes, add the maple syrup and vanilla extract to the bowl and mix thoroughly.
  • Cover the bowl and refrigerate for about 4 hours, or overnight.
  • While waiting, wash and pat dry the fresh raspberries. Set aside some for layering later.
  • Once thickened, give the pudding a good stir. Layer some of the pudding in the bottom of your serving cups, and then add a layer of fresh raspberries. Repeat this pattern, ending with the pudding on top.
  • Top your Raspberry Chia Pudding Cups with your choice of toppings.
  • Place your cups back in the fridge until ready to serve, and enjoy them cold.

Notes

Use fresh ingredients for the best flavor. Let the chia mixture sit for at least 4 hours to ensure proper thickening; overnight is even better. Consider using flavored milks for added interest. Store them in the fridge for up to 5 days.
