- 4 cups sugar
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract (optional)
- 1/2 teaspoon cinnamon (optional)
Wash the ripe plums thoroughly, remove the pits, and chop them into small pieces.
In a large saucepan, combine the chopped plums, sugar, and fresh lemon juice. Add vanilla extract and cinnamon if desired. Stir well to coat the plums.
Set the saucepan over medium heat and stir occasionally to help dissolve the sugar.
Once boiling, reduce the heat to medium-low and let it simmer for about 25 minutes, stirring frequently until thickened.
To test if the jam is ready, place a spoonful on a cold plate and freeze for 2 minutes. If it holds its shape, it's ready.
Remove from heat and cool for a few minutes before transferring into clean, sterilized jars. Leave some space at the top of the jars.
Seal the jars with lids and process in a hot water bath if desired, or let cool at room temperature before refrigerating.
