Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup cold unsalted butter
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 3–4 tablespoons ice water
  • 4–5 medium fresh peaches, sliced
  • 1 teaspoon cinnamo
  • 1 teaspoon vanilla extract
  • 1 beaten egg (for wash)
  • Turbinado sugar (optional, for sprinkling)

Instructions
 

  • In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough comes together. Form the dough into a disk shape.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Slice peaches into thin wedges and mix with sugar, cinnamon, and vanilla extract.
  • Roll the chilled dough into a rough circle about 12 inches in diameter on a floured surface.
  • Transfer the rolled dough to a baking sheet lined with parchment paper, pile the peach filling in the center, leaving a 2-inch border. Fold edges of the dough over the peaches.
  • Brush the crust with a beaten egg and sprinkle with extra sugar and Turbinado sugar, if desired.
  • Preheat the oven to 400°F and bake for 30-35 minutes until the crust is golden brown and the peaches are bubbly.
  • Let cool for 10-15 minutes before slicing.

Notes

Use ripe but firm peaches for sweetness. Keep butter cold for a flaky crust. Serve with whipped cream or ice cream.
