Ingredients
  

  • 4-5 medium fresh peaches (peeled, pitted, and sliced)
  • 1/3 cup granulated sugar
  • 1 cup all-purpose flour + extra for dusting
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 tsp salt
  • 3-4 tbsp ice water
  • 1/2 tsp cinnamon (optional)
  • 1 egg (beaten, for egg wash)

Instructions
 

  • In a mixing bowl, combine flour, salt, and sugar. Blend in cold butter until the mixture resembles coarse crumbs.
  • Gradually add ice water until the dough holds together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  • Prepare the peaches by slicing and optionally tossing them with cinnamon and additional sugar.
  • Preheat the oven to 400°F (200°C). Roll out the dough on a floured surface into a rough circle.
  • Transfer the dough to a parchment-lined baking sheet. Spoon the peach mixture onto the center, leaving a 2-inch border.
  • Fold the dough edges over the peaches, pleating as necessary. Brush with beaten egg and sprinkle with sugar.
  • Bake for 35-40 minutes until the crust is golden brown and the peaches are bubbling.
  • Cool for a few minutes before serving warm, optionally with ice cream or whipped cream.

Notes

Use cold butter for a flaky crust. Chill the dough well for the best texture. Leftovers can be used to top yogurt or oatmeal.
