Ingredients
  

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups heavy cream
  • 3/4 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 4 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon lemon juice

Instructions
 

  • In a bowl, combine crushed graham crackers and melted butter. Press this mixture firmly into the bottom of an 8-inch square dish.
  • In a large mixing bowl, add heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.
  • Gently fold in mixed berries into the whipped cream.
  • Spread half of the berry cream mixture over the graham cracker crust. Add another layer of graham crackers, followed by remaining berry cream and top with another layer of graham crackers.
  • Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Slice into squares and garnish with fresh berries and powdered sugar before serving.

Notes

For quick cleanup, use parchment paper to line your dish before adding the crust! Always chill the mixing bowl before whipping the cream. If using frozen berries, thaw them completely and drain excess moisture before mixing.
