Ingredients
  

  • 2 large Chicken breasts
  • 1 cup Orzo pasta
  • 3 cups Chicken broth
  • 1/2 cup Heavy cream
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes
  • 2 cups Spinach
  • 1 tsp Basil
  • 1 tsp Thyme
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions
 

  • In a large pot or skillet, heat the olive oil over medium heat.
  • Season the chicken breasts with salt and pepper, then add them to the pot. Brown for 5-7 minutes on each side until golden brown. Remove and set aside.
  • Add the minced garlic to the pot and cook until fragrant, about 1 minute.
  • Stir in the sun-dried tomatoes and chicken broth, scraping any brown bits from the bottom.
  • Bring the mixture to a gentle boil, add the orzo, stir well, cover and simmer for about 10 minutes.
  • After the orzo is tender, stir in the heavy cream and spinach.
  • Add the chicken back to the pot and let it simmer for another 5-10 minutes until the chicken is cooked through.
  • Stir in the grated Parmesan cheese and herbs, taste for seasoning and adjust if needed.

Notes

Prep Ahead: Chop herbs and garlic in advance. Use a meat thermometer to check chicken at 165°F. Don't overcook orzo. Customize cheese and add spices if desired.
