Ingredients
  

  • 1/4 cup fresh lemon juice
  • 3/4 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Squeeze lemons to obtain about 1/4 cup of fresh lemon juice.
  • In a mixing bowl, combine the fresh lemon juice, Dijon mustard, and minced garlic.
  • Slowly whisk in the extra-virgin olive oil until fully incorporated.
  • Season with salt and black pepper, adjusting to taste.
  • Transfer to a jar with a tight-fitting lid and let it rest for at least 10 minutes before use.

Notes
