Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon butter

Instructions
 

  • Heat the olive oil over medium-high heat in a large skillet. Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside on a plate, covering loosely with foil.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any browned bits.
  • Add fresh herbs and bring the mixture to a gentle simmer.
  • Return the chicken to the skillet and warm through for a couple of minutes.
  • Stir in the butter before serving and adjust seasoning as needed.

Notes

Prep your ingredients ahead of time. For depth of flavor, marinate chicken in lemon juice, olive oil, and herbs for 30 minutes before cooking. This dish can be paired with garlic mashed potatoes, steamed asparagus, quinoa salad, or couscous.
