Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lemon zest
  • 1 cup blueberries

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, egg, melted butter, lemon juice, and lemon zest.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined.
  • Carefully fold in the blueberries.
  • Grease a mini muffin pan with non-stick spray or butter.
  • Spoon the batter into the muffin cups, filling them about 2/3 full.
  • Place your pan in the preheated oven and bake for 12–15 minutes.
  • Remove the bites from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack.
  • Serve warm, optionally drizzled with maple syrup.

Notes

Use fresh blueberries for best results. Chill mixing bowls before starting for optimal texture. Do not over-mix the batter.
