Ingredients
  

  • 4 pieces Chicken thighs (bone-in, skin-on) Substitute with chicken breasts if preferred
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Black pepper Freshly ground
  • Salt To taste
  • 1 tbsp Olive oil For searing chicken
  • 2 tbsp Unsalted butter For sautéing vegetables
  • 1 small Yellow onion Finely chopped
  • 3 cloves Garlic Minced
  • 1 cup Long-grain white rice Do not rinse to retain starchiness
  • 2.5 cups Chicken broth Low sodium preferred
  • 0.75 cup Heavy cream Use half & half for lighter version
  • 1 tsp Thyme Dried or fresh
  • 1 tsp Parsley Dried or fresh
  • 0.5 tsp Crushed red pepper flakes Optional, for heat
  • 0.5 cup Parmesan cheese Optional, for cheesy finish

Instructions
 

  • Season Chicken: Pat chicken thighs dry. Season evenly with paprika, garlic powder, onion powder, salt, and black pepper.
  • Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down first, until golden (4–5 mins per side). Remove and set aside.
  • Sauté Aromatics: In the same pan, melt butter. Add chopped onions and cook until translucent. Stir in minced garlic for 1 minute.
  • Toast Rice: Add rice and stir for 1–2 minutes to toast.
  • Add Liquids: Pour in chicken broth and heavy cream. Stir in thyme, parsley, and red pepper flakes (if using). Season with salt and pepper to taste.
  • Simmer: Return chicken to the pan, skin-side up. Cover and reduce heat to low. Simmer for 25–30 minutes until rice is tender and chicken is cooked through (165°F internal temperature).
  • Finish: Sprinkle parmesan cheese (if using) over the dish. Remove from heat and let rest 5 minutes before serving.
  • Garnish & Serve: Top with fresh parsley and enjoy hot.

Notes

You can swap in boneless chicken thighs or chicken breasts for faster cooking.
For a baked version, assemble in a casserole and bake at 375°F covered for 45 minutes, then uncover for 10 more.
Add frozen peas or spinach in the last 10 minutes for a veggie boost.
