Ingredients
  

  • 200g Korean noodles (e.g., sweet potato or wheat)
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 2 cloves garlic, minced
  • 3 green onions, chopped
  • 1 medium carrot, julienned
  • 1 bell pepper, sliced
  • 1 tablespoon sesame seeds (for garnish)
  • 200g protein of choice (tofu, chicken, beef, or shrimp) (optional)

Instructions
 

  • Boil a pot of water and cook Korean noodles according to package instructions, typically around 5-7 minutes; stir occasionally and ensure they are al dente.
  • Drain and rinse the noodles under cold water for about 30 seconds to halt cooking and remove excess starch.
  • In a large skillet, heat sesame oil over medium heat. Add minced garlic, julienned carrots, and bell pepper slices. Stir-fry for 3-4 minutes until softened.
  • Toss in the drained noodles alongside soy sauce and gochujang, gently mixing to coat. Cook for another 2-3 minutes to heat through.
  • Serve immediately with chopped green onions and sesame seeds on top.

Notes

This recipe is quick, so have all ingredients prepped before starting. Feel free to add extra vegetables during sautéing. For personal taste, adjust spice level by modifying gochujang amount.
