Ingredients
  

  • 1 pound chicken breast, diced
  • 1/4 cup hot honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups cooked rice (white, brown, or quinoa)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • lime wedges (optional, for serving)

Instructions
 

  • Dice the chicken breast and optionally marinate with olive oil, garlic, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat and add the diced chicken, cooking until golden brown (about 7-10 minutes).
  • Add minced garlic during the last couple of minutes of cooking to infuse flavor.
  • Reduce heat to low, add hot honey, and stir to coat the chicken evenly. Simmer for a minute.
  • Assemble the bowls starting with cooked rice or quinoa topped with hot honey chicken.
  • Garnish with fresh cilantro and lime juice if using.

Notes

Make sure to check chicken temperature (165°F) with a meat thermometer. Consider making extra hot honey sauce. Cook rice while chicken is sautéing and prep ingredients in advance for quick cooking.
