Ingredients
  

  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Green onions for garnish
  • 2 cups vegetables (like bell peppers, broccoli, or snap peas)
  • Rice or rice alternative for serving

Instructions
 

  • Dice the chicken breast into bite-sized pieces and season lightly with salt and pepper.
  • In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken and cook for about 5 minutes until golden brown.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Mix honey and soy sauce in a small bowl, then pour into the skillet. Let it simmer for a couple of minutes until the sauce thickens slightly.
  • Add your choice of vegetables to the skillet and sauté for about 3-5 minutes until they are tender but still crisp.
  • Serve the chicken and vegetable mixture over a bed of rice or greens, garnished with sliced green onions.
