Ingredients
  

  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 cups cooked rice (white or brown)
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 tablespoon sesame seeds
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • salt and pepper to taste

Instructions
 

  • Start by cutting the chicken breast into bite-sized pieces and season with salt and pepper.
  • In a bowl, mix honey, minced garlic, soy sauce, and ginger to form a thick glaze.
  • Heat olive oil in a large skillet over medium heat; add seasoned chicken and cook until browned, about 5-7 minutes.
  • In the same skillet, add bell peppers and broccoli, sautéing for 3-5 minutes until vibrant and tender-crisp.
  • Return the chicken to the skillet and pour the honey garlic sauce over all ingredients, cooking for another 2-3 minutes until fully cooked.
  • In a serving bowl, place the cooked rice and top with the chicken and veggie mixture, drizzling any remaining sauce on top. Finish with sesame seeds.

Notes

Make ahead by marinating chicken in sauce for 30 minutes. Store in an airtight container in the fridge for up to four days.
