Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1/3 cup honey
  • 1/4 cup balsamic vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 2 pounds potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup heavy cream
  • Chives, chopped (for garnish) - optional

Instructions
 

  • Season chicken breasts with salt and pepper on both sides.
  • In a small bowl, whisk together honey, balsamic vinegar, and minced garlic; set aside.
  • Heat olive oil in a large skillet over medium-high heat, add chicken breasts, and cook for 6-7 minutes on each side until golden brown.
  • Pour the prepared glaze over the chicken, reduce heat to medium-low, cover, and simmer for 10 minutes.
  • While chicken is cooking, boil a large pot of salted water, add chopped potatoes, and cook until tender, about 15-20 minutes.
  • Drain potatoes, return to pot, add butter and heavy cream, and mash until smooth. Season with salt.
  • Serve Honey Balsamic Chicken with Creamy Mashed Potatoes, drizzling extra sauce over the chicken and garnishing with chopped chives.

Prep ingredients in advance to streamline cooking during busy evenings. Use a meat thermometer to check for doneness — chicken should reach 165°F internally.
