Ingredients
  

  • 4 medium fresh tomatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1-2 teaspoons pink salt, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumi
  • 1 teaspoon ground coriander
  • 1 jalapeño, diced (optional)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups cooked rice or quinoa

Instructions
 

  • Prepare Your Ingredients: Wash and dice fresh tomatoes, chop the onion, and mince the garlic. Set aside for easy access.
  • Heat the Olive Oil: In a large skillet over medium heat, add the olive oil. Once shimmering, it's ready.
  • Sauté the Aromatics: Add the chopped onion and cook for 2-3 minutes until translucent. Add minced garlic and jalapeño, stirring constantly for another minute.
  • Add the Tomatoes and Spices: Stir in diced tomatoes, ground cumin, and ground coriander. Simmer for 5-7 minutes until tomatoes break down.
  • Season It: Sprinkle in the pink salt, adjusting to taste. Cook for another minute.
  • Stir in Black Beans: Gently fold in black beans and cook together for an additional 5 minutes.
  • Finish with Cilantro: Toss in chopped cilantro just before serving.
  • Serve Over Grains: Serve the mixture over cooked rice or quinoa.
