Ingredients
  

  • 2 lbs beef stew meat (or chuck roast, cut into cubes)
  • 4 tbsp unsalted butter divided
  • 6 cloves garlic minced
  • 1 medium onion finely diced
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Pat beef cubes dry with paper towels.
  • Heat 2 tbsp butter in a skillet over medium heat. Sear beef in small batches until browned. Transfer to slow cooker.
  • In the same skillet, melt remaining butter. Add minced garlic and onion. Cook until fragrant, then pour in beef broth and Worcestershire sauce. Scrape up browned bits and transfer mixture into the slow cooker.
  • Sprinkle in paprika, thyme, salt, and pepper. Stir to coat beef evenly. Cover with lid. Cook on Low for 7–8 hours or High for 4–5 hours until beef is tender.
  • Garnish with fresh parsley. Serve hot with mashed potatoes, rice, or vegetables.

Notes

Best made with chuck roast or stew beef for tenderness.
Can be stored in the refrigerator for up to 4 days or frozen for 3 months.
Add vegetables directly into the slow cooker for a one-pot meal.
