  • 4 boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby potatoes halved, or russet potatoes cut into chunks
  • 4 cloves garlic minced, or 2 tsp jarred minced garlic
  • 0.5 cup Parmesan cheese freshly grated
  • 4 tbsp butter melted, or 3 tbsp olive oil
  • 0.5 cup chicken broth or heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning or a mix of thyme, oregano, and parsley
  • Fresh parsley chopped, for garnish

Instructions

  • Prepare the ingredients: Wash and cut the potatoes. Mince garlic if using fresh.
  • Layer the crockpot: Place chicken in the bottom of the slow cooker. Add potatoes on top.
  • Mix flavors: In a bowl, combine melted butter (or olive oil), garlic, Parmesan, salt, pepper, and Italian seasoning. Pour over chicken and potatoes.
  • Add liquid: Pour chicken broth (or cream) into the crockpot to keep everything moist.
  • Cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
  • Finish: Stir gently, garnish with fresh parsley and extra Parmesan, then serve hot.

For extra flavor, brown chicken in a skillet before placing it in the crockpot.
