- 4 boneless, skinless chicken breasts or thighs
- 1.5 lbs baby potatoes halved, or russet potatoes cut into chunks
- 4 cloves garlic minced, or 2 tsp jarred minced garlic
- 0.5 cup Parmesan cheese freshly grated
- 4 tbsp butter melted, or 3 tbsp olive oil
- 0.5 cup chicken broth or heavy cream
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp Italian seasoning or a mix of thyme, oregano, and parsley
- Fresh parsley chopped, for garnish
Prepare the ingredients: Wash and cut the potatoes. Mince garlic if using fresh.
Layer the crockpot: Place chicken in the bottom of the slow cooker. Add potatoes on top.
Mix flavors: In a bowl, combine melted butter (or olive oil), garlic, Parmesan, salt, pepper, and Italian seasoning. Pour over chicken and potatoes.
Add liquid: Pour chicken broth (or cream) into the crockpot to keep everything moist.
Cook: Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
Finish: Stir gently, garnish with fresh parsley and extra Parmesan, then serve hot.
For extra flavor, brown chicken in a skillet before placing it in the crockpot.
Add veggies like carrots or green beans during the last hour for a complete one-pot dinner.
Thighs tend to stay juicier than breasts in long cooking times.
Store leftovers in an airtight container in the fridge for up to 3 days.
