  • 2 large cucumbers, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional herbs (like dill or parsley) to taste

Instructions
 

  • Wash the cucumbers thoroughly and slice them thinly. Peel and slice the onion.
  • In a mixing bowl, combine the white vinegar, water, sugar, salt, and black pepper. Stir until the sugar dissolves.
  • Layer the cucumber and onion slices in a jar, pour the vinegar brine over them, ensuring they are fully submerged.
  • Seal the container and refrigerate for at least 1 hour to marinate.

Notes

Use a sharp knife or mandoline for even slices. Marinate longer for more flavor. Store leftovers in a sealed container for up to one week.
