Materials

  • 4 boneless, skinless chicken breasts or thighs for more flavor
  • 10.5 oz cream of chicken soup
  • 1 cup chicken broth low-sodium recommended
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp ranch seasoning or poultry seasoning
  • 2 tbsp cornstarch optional, for thickening
  • 2 tbsp cold water for cornstarch slurry
  • salt and black pepper to taste

Instructions

  • Lightly grease your crockpot with non-stick spray.
  • Place chicken breasts (or thighs) at the bottom of the crockpot.
  • In a bowl, whisk together cream of chicken soup, chicken broth, onion powder, garlic powder, and ranch seasoning until smooth.
  • Pour the mixture over the chicken, making sure it’s evenly coated.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken reaches 165°F (74°C).
  • Remove the chicken, shred with two forks or slice, then return it to the gravy.
  • To thicken the gravy: Mix cornstarch and cold water into a slurry, stir into the crockpot, and cook for an additional 10–15 minutes.
  • Taste and season with salt and black pepper as needed.
  • Serve warm over mashed potatoes, rice, or noodles with your favorite veggie sides.

Notes

For extra flavor, use chicken thighs instead of breasts.
Add mushrooms, fresh herbs, or Cajun seasoning for a twist.
Store leftovers in the refrigerator for 3–4 days or freeze for up to 3 months.
