- 2 lbs boneless, skinless chicken breasts or thighs
- 3 cups broccoli florets fresh or frozen
- 1.5 cups shredded sharp cheddar cheese divided
- 8 oz cream cheese cubed
- 1 cup chicken broth
- 1 cup heavy cream or condensed cream of chicken soup
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp salt adjust to taste
- 0.5 tsp black pepper
Prep the chicken – Trim chicken breasts and place them at the bottom of the crockpot.
Season – Sprinkle garlic powder, onion powder, salt, and black pepper over the chicken.
Add base – Pour in chicken broth and heavy cream (or condensed soup). Add cubed cream cheese on top.
Cook – Cover and cook on low for 6–7 hours or high for 3–4 hours.
Add broccoli – Stir in fresh broccoli halfway through cooking, or frozen broccoli during the last hour.
Add cheese – About 15 minutes before serving, stir in 1 cup shredded cheddar until melted and creamy.
Shred chicken – Use two forks to shred the chicken directly in the crockpot. Stir everything together.
Serve – Top with the remaining ½ cup cheddar and let it melt before serving. Enjoy with rice, pasta, or bread.
