- 4 boneless, skinless chicken breasts or thighs for juicier results
- 1.5 pounds baby potatoes halved
- 1 cup Parmesan cheese freshly grated
- 4 cloves garlic minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tbsp Italian seasoning
- 1 tsp onion powder
- 2 tbsp olive oil
- salt to taste
- black pepper to taste
- fresh parsley chopped, for garnish
Season the chicken with salt, pepper, and Italian seasoning.
Optional step: Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until golden brown.
Place the baby potatoes at the bottom of the crock pot.
Arrange the chicken breasts on top of the potatoes.
In a mixing bowl, whisk together minced garlic, chicken broth, heavy cream, Parmesan cheese, onion powder, and remaining seasoning.
Pour the mixture evenly over the chicken and potatoes.
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and potatoes are fork-soft.
Garnish with fresh parsley and extra Parmesan before serving.
