Ingredients
  

Main Ingredients

  • 4 boneless, skinless chicken breasts or thighs for juicier results
  • 1.5 pounds baby potatoes halved
  • 1 cup Parmesan cheese freshly grated
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tbsp Italian seasoning
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • salt to taste
  • black pepper to taste
  • fresh parsley chopped, for garnish

Instructions
 

  • Season the chicken with salt, pepper, and Italian seasoning.
  • Optional step: Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until golden brown.
  • Place the baby potatoes at the bottom of the crock pot.
  • Arrange the chicken breasts on top of the potatoes.
  • In a mixing bowl, whisk together minced garlic, chicken broth, heavy cream, Parmesan cheese, onion powder, and remaining seasoning.
  • Pour the mixture evenly over the chicken and potatoes.
  • Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and potatoes are fork-soft.
  • Garnish with fresh parsley and extra Parmesan before serving.

Notes

For a low-carb version, substitute potatoes with cauliflower or zucchini.
Add vegetables like mushrooms or broccoli for a complete one-pot meal.
Substitute half the cream with milk or half-and-half for a lighter sauce.
Store leftovers in the fridge for up to 3 days or freeze chicken and sauce (without potatoes) for up to 2 months.
