Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs, beate
  • Olive oil spray, as needed

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Dice the chicken breasts into bite-sized cubes.
  • In three separate bowls, place the beaten eggs in one, combine the grated Parmesan cheese, panko breadcrumbs, and spices in another, and keep the cut chicken in the last bowl.
  • Take a piece of chicken, dip it in the beaten egg, then roll it in the breadcrumb mixture. Place the coated chicken bites on a baking sheet lined with parchment paper.
  • Lightly mist the coated chicken bites with olive oil spray.
  • Place the baking sheet in the preheated oven and bake for 15-20 minutes, flipping halfway through.
  • Use a meat thermometer to check if the internal temperature is 165°F (74°C).
  • Once they're perfectly crispy, take them out of the oven and let them cool slightly before serving.

Notes

Use fresh Parmesan for the best flavor. Don't overcrowd the baking sheet for even cooking.
