Ingredients
  

  • 1 pound boneless, skinless chicken thighs
  • 1 cup flour
  • 1 cup breadcrumbs
  • 2 eggs, beate
  • 1/2 cup bang bang sauce
  • 8 soft taco-sized flour tortillas
  • 1 cup shredded cabbage
  • 1/2 cup chopped green onions
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving

Instructions
 

  • Slice the chicken thighs into bite-sized pieces and season with salt and pepper.
  • Set up your dredging station with flour, beaten eggs, and breadcrumbs in separate bowls.
  • Dredge each piece of chicken in flour, then egg, and finally breadcrumbs, pressing gently to adhere.
  • Heat oil in a frying pan over medium-high heat and fry the chicken until golden brown, about 3–4 minutes per side.
  • Warm tortillas in a dry pan and add chicken, followed by shredded cabbage, green onions, and cilantro.
  • Drizzle with bang bang sauce and squeeze fresh lime over the top.

Notes

Do all your prep ahead of time! Chop all the veggies and set everything out. For extra crunch, consider air frying the chicken instead of frying it. Let the fried chicken drain on paper towels to remove excess oil while keeping it crispy.
