Ingredients
  

  • 4 (6 oz each) salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon dried Italian herbs
  • Salt and pepper, to taste

Instructions
 

  • Pat the salmon fillets dry with paper towels and season with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering.
  • Place the salmon skin-side down in the skillet and cook for about 4-5 minutes without moving.
  • Flip the salmon and cook for another 2-3 minutes until cooked through, then remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant.
  • Add chopped sun-dried tomatoes and cook for another minute.
  • Pour in heavy cream and bring to a gentle simmer.
  • Add fresh spinach and allow it to wilt, stirring in dried Italian herbs and adjusting seasoning.
  • Return salmon to the skillet and spoon sauce over the top, simmering for an additional 1-2 minutes.
  • Sprinkle grated Parmesan cheese over the top and stir until melted.

Notes

Use fresh herbs for garnish. Don't rush the salmon for a perfect crust. Adjust creaminess to taste. Pair with light salad or crusty bread. Store leftovers in an airtight container for 2-3 days.
