Materials

  • 2 large chicken breasts boneless, skinless, cut into bite-sized pieces
  • 12 oz pasta penne, fettuccine, or your choice
  • 3 tbsp butter unsalted, divided
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
  • Cook the Chicken: Season chicken with salt, pepper, and Italian seasoning. In a skillet, melt 2 tbsp butter over medium-high heat. Add chicken and cook until golden brown and fully cooked (6–8 minutes). Remove and set aside.
  • Make the Sauce: In the same skillet, melt the remaining butter. Add garlic and sauté for 30–60 seconds until fragrant. Stir in chicken broth and heavy cream. Simmer gently for 5 minutes.
  • Add Parmesan: Lower the heat and stir in parmesan cheese until melted and smooth. Season with salt and pepper.
  • Combine Everything: Return chicken to the skillet. Toss in pasta and mix well. Add a splash of reserved pasta water if needed to loosen the sauce.
  • Garnish & Serve: Top with chopped parsley and extra parmesan. Serve hot.
