Ingredients
  

  • 1 lb Chicken breasts, diced
  • 6 cloves Garlic, minced
  • 1 cup Rice (white or brown)
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Parsley, chopped (for garnish)

Instructions
 

  • Start by dicing your chicken breasts into bite-sized pieces. Season with salt and pepper.
  • In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  • Add the seasoned chicken to the skillet in a single layer and sauté for about 5-7 minutes until golden brown and cooked through.
  • Once the chicken is fully cooked, add the minced garlic to the skillet and sauté for 1-2 minutes.
  • Stir in the rice and toast it for 1-2 minutes. Pour in the chicken broth and bring to a simmer.
  • Reduce the heat to low and stir in the heavy cream and the remaining tablespoon of butter. Simmer until creamy.
  • Taste and adjust seasoning as needed, then plate the dish and garnish with parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for a month. Reheat on the stove with a splash of broth or in the microwave.
