Ingredients
  

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 packet ranch seasoning mix or homemade ranch mix
  • 8 oz cream cheese or Greek yogurt for a lighter option
  • 1/2 cup low-sodium chicken broth
  • salt & pepper to taste
  • 1 cup chopped vegetables Optional: carrots, green beans, or potatoes

Instructions
 

  • Trim excess fat from chicken and season lightly with salt, pepper, and garlic powder.
  • Place chicken in the crock pot.
  • In a mixing bowl, combine ranch seasoning, cream cheese (or Greek yogurt), and chicken broth until smooth.
  • Pour the mixture over the chicken in the crock pot.
  • Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken reaches 165°F and is tender.
  • Shred chicken with two forks, mix with the creamy sauce, and serve with your favorite sides.

Notes
