Ingredients
  

  • 1 pound chicken breasts, diced
  • 8 ounces pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for garnish

Instructions
 

  • In a large pot, bring salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water for later.
  • In a large skillet over medium-high heat, warm the olive oil. Add the diced chicken. Sprinkle with Cajun seasoning, salt, and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add a touch more olive oil if needed. Sauté the minced garlic until fragrant, about 1 minute.
  • Lower the heat and pour in the heavy cream, stirring to combine. Bring to a simmer and allow it to thicken for about 2-3 minutes.
  • Stir in the grated Parmesan cheese and mix until melted and smooth. Adjust seasoning with salt and pepper to taste.
  • Add the cooked chicken and drained pasta back into the skillet. Gently toss to coat everything evenly in the creamy sauce.
  • Remove from heat. Garnish with fresh parsley if desired and serve immediately.

Notes
