Ingredients
  

  • 1 pound steak (sirloin or flank)
  • 2 cups cooked rice (white or brown)
  • 1 cup queso sauce
  • 1 cup bell peppers (sliced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumi
  • to taste salt
  • to taste pepper
  • optional fresh cilantro (for garnish)

Instructions
 

  • Cook the rice according to package instructions.
  • Heat olive oil in a large skillet over medium-high heat. Sauté chopped onions and sliced bell peppers for about 5-7 minutes until soft.
  • Add minced garlic and cook for about 30 seconds until fragrant.
  • Add cubed steak to the skillet and season with chili powder, cumin, salt, and pepper. Cook for 5-7 minutes until browned.
  • Lower heat to medium-low and pour in the queso sauce, stirring gently until combined and heated through.
  • In a serving bowl, create a bed of rice, then top with the cheesy steak and veggie mixture. Garnish with fresh cilantro.
