Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb steak (sirloin or ribeye)
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • ½ cup parmesan cheese, grated
  • salt and pepper to taste
  • fresh parsley for garnishing

Instructions

  • Trim excess fat from the steak and cut it into bite-sized pieces. Season with salt and pepper.
  • Melt 1 tablespoon of butter in a skillet over medium-high heat. Sear the steak until brown on all sides, about 3-4 minutes. Remove from the pan.
  • Add more butter and minced garlic to the same skillet. Sauté for about 1 minute until fragrant.
  • Pour in the beef broth and bring to a gentle simmer, scraping any bits off the bottom of the pan.
  • Stir in the pasta, cover, and cook according to package instructions (about 10-12 minutes). Stir occasionally.
  • Once pasta is al dente, reduce heat to low. Stir in the heavy cream and return the steak to the skillet.
  • Gradually add cheddar and parmesan cheese, stirring until melted and creamy.
  • Taste and season with additional salt and pepper if needed. Garnish with parsley before serving.

Notes

For best flavor, let steak come to room temperature before cooking. Use high-quality pasta.
