Cheesy Chicken Broccoli Crockpot Delight

Ingredients
  

  • 2 lbs Boneless, skinless chicken breasts Thighs can also be used
  • 4 cups Broccoli florets Fresh preferred
  • 2 cups Shredded cheddar cheese Sharp cheese recommended
  • 10.5 oz Condensed cream of chicken soup
  • 1 cup Sour cream Or Greek yogurt
  • 1 cup Milk Whole or 2%
  • 1 tsp Garlic powder
  • 0.5 tsp Onion powder
  • Salt and pepper To taste
  • 1 cup Cooked rice or egg noodles Optional, for serving
  • Chopped parsley or crushed Ritz crackers Optional garnish

Instructions
 

  • Prepare the Chicken
    Trim and season the chicken with garlic powder, onion powder, salt, and pepper. Place the chicken in the bottom of the crockpot.
  • Create the Sauce
    In a mixing bowl, combine cream of chicken soup, sour cream, milk, and half of the shredded cheese. Mix until smooth.
  • Layer Ingredients
    Pour the sauce mixture over the chicken in the crockpot. Cover with lid.
  • Slow Cook
    Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and tender.
  • Add Broccoli and Cheese
    About 30–45 minutes before the end of cooking, add broccoli and sprinkle the remaining cheese on top. Close the lid and let it finish cooking.
  • Shred and Combine
    Use two forks to shred the chicken inside the crockpot. Stir all ingredients together until well mixed and cheese is melted.
  • Serve
    Serve hot over cooked rice or egg noodles. Garnish with parsley or crushed crackers if desired.

Notes

For a low-carb version, omit rice and serve over cauliflower rice or steamed greens.
To make the sauce thicker, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) during the last 30 minutes.
Substitute cream cheese for a richer texture.
This recipe freezes well for up to 3 months.
