Cheesy Chicken Broccoli Crockpot Delight

- 2 lbs Boneless, skinless chicken breasts Thighs can also be used
- 4 cups Broccoli florets Fresh preferred
- 2 cups Shredded cheddar cheese Sharp cheese recommended
- 10.5 oz Condensed cream of chicken soup
- 1 cup Sour cream Or Greek yogurt
- 1 cup Milk Whole or 2%
- 1 tsp Garlic powder
- 0.5 tsp Onion powder
- Salt and pepper To taste
- 1 cup Cooked rice or egg noodles Optional, for serving
- Chopped parsley or crushed Ritz crackers Optional garnish
Prepare the Chicken
Trim and season the chicken with garlic powder, onion powder, salt, and pepper. Place the chicken in the bottom of the crockpot.
Create the Sauce
In a mixing bowl, combine cream of chicken soup, sour cream, milk, and half of the shredded cheese. Mix until smooth.
Layer Ingredients
Pour the sauce mixture over the chicken in the crockpot. Cover with lid.
Slow Cook
Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and tender.
Add Broccoli and Cheese
About 30–45 minutes before the end of cooking, add broccoli and sprinkle the remaining cheese on top. Close the lid and let it finish cooking.
Shred and Combine
Use two forks to shred the chicken inside the crockpot. Stir all ingredients together until well mixed and cheese is melted.
Serve
Serve hot over cooked rice or egg noodles. Garnish with parsley or crushed crackers if desired.
For a low-carb version, omit rice and serve over cauliflower rice or steamed greens.
To make the sauce thicker, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) during the last 30 minutes.
Substitute cream cheese for a richer texture.
This recipe freezes well for up to 3 months.
