  • 2 tablespoons fresh mint leaves, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chopped nuts (such as walnuts or almonds)

Instructions
 

  • Wash the carrots thoroughly and peel if preferred. Use a vegetable peeler to create long, thin ribbons.
  • Finely chop the parsley and mint, then combine them in a medium bowl.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
  • In a large salad bowl, toss the carrot ribbons with the chopped herbs. Drizzle the dressing over the top and mix gently.
