  • 4 cups fresh tomatoes, diced
  • 1 cup basil leaves, chopped
  • 2-3 cloves garlic, minced
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-2 baguette or ciabatta bread, sliced

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and set aside.
  • Slice your baguette or ciabatta into 1/2-inch thick pieces.
  • Arrange the slices on a baking sheet and brush lightly with olive oil on both sides. Bake for about 5-7 minutes or until golden brown.
  • Once your bread is toasted, spoon a generous amount of the tomato mixture onto each slice.
  • Serve immediately for best flavor.

Notes

Use room temperature tomatoes for enhanced flavor. You can prepare the topping ahead of time and store it in the fridge.
