Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamo
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup milk (dairy or non-dairy)
  • 1/4 cup butter (or coconut oil), melted
  • 1/3 cup honey (or maple syrup)
  • 1 cup fresh or frozen blueberries

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking powder, cinnamon, and salt.
  • In another bowl, whisk together the egg, milk, melted butter, and honey until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the blueberries gently.
  • Spread the mixture into the prepared baking pan and press down evenly.
  • Bake for 25-30 minutes or until the edges are golden brown.
  • Allow to cool in the pan for 10 minutes, then lift out and let cool completely on a wire rack.
  • Cut into squares or rectangles.

Notes

Store in an airtight container in the refrigerator for 5-7 days. Can be frozen for up to three months. n For vegan version, use flaxseed meal for egg and a vegan sweetener.
